  • Approximately 3 years ago I was asked by Director Custodial Operations Simon Raper to re-open
    the Officers Mess following its re-furb at Cessnock Correctional Complex as the business was
    floundering.
    The Mess is now a successful business catering for the whole complex.
    On a regular basis I organize and facilitate catering functions for up to 250 people.
    I train inmates on a daily basis with all aspects of a hospitality organization from front of office
    to receiving goods at the back end.
    All inmates are trained in Basic Food Hygiene/handling skills and how to operate and clean all
    equipment in the kitchen.
    I have an understanding of issues related to a culturally diverse environment, as a Supervisor I
    have a broad knowledge of principles, which ensure all individuals have the greatest possible
    opportunity to contribute to, and participate in, all levels of public life. As a Supervisor, I
    promote this by having an open mind to new ideas, allowing staff to actively contribute to the
    team without any prejudices or bias. I actively encourage all staff to participate in all aspects of
    teamwork regardless of rank or cultural background.

Long Bay Correctional Aged Rehabilition Unit.

  • Employed as the Senior Officer in the ARU ( Aged Rehab Unit )
    As an aged care worker my role encompassed a range of tasks designed to assist the elderly
    inmates with there daily living.
    The ARU team would provide essential physical , emotional , and social support to help elderly
    inmates maintain their independence , dignity and quality of life.
    I would assist with daily living which included dressing , mobility , meals , medication
    management whilst monitoring health and reporting changes.

  • For four years within the Department, I concentrated my efforts on the Activities Section.
    Frequently I keep myself up to date with all new Policies and Procedures and I am fully
    conversant with the NSW Corrective Services Department’s Activities Purchases, from the initial

    Buy-up form to Costings and Purchase Reconciliations. My previous experience in retail and
    hospitality gives me the ability to maintain accurate financial records.
    During my time as Senior Activities Officer, I found my catering background was to a great
    advantage when organising Family days, Cultural days and Staff functions. Also offering advice
    to inmates on maintaining a healthy nutritional diet, explaining the importance of Proteins,
    Carbohydrates, Fats, and Nutrients and because of my keen interest in sport I have also been
    able to set out training programmes for inmates that can be followed within the confines of a
    Prison.

Senior Catering Officer Long Bay Complex

  • From 1995 until 1996 I was employed as the Catering Overseer at the Metropolitan Remand
    Centre, Long Bay Complex. I was responsible for the supervising, training, employing, rostering
    and assisting 18 Inmates in the preparation, cooking and distribution of meals for 800 Inmates
    at 8 different locations. The logistics of the distribution were quite detailed as numerous
    locations were in different Correctional Centres with different classifications.
    In 1996 I successfully gained a promotion to Senior Catering Overseer. I was an integral part of
    the relocation of the main kitchen at the Metropolitan Remand Centre to the Malabar Special
    Programs Centre. This was a difficult project as the relocation had to be completed within a
    short period of time whilst ensuring all inmates received their daily rations. This reduced the
    catering facilities at the Long Bay Complex to one main kitchen, located at the Malabar Special
    Programs Centre. My responsibilities increased as I was responsible for the employment,
    training and supervision of 30 inmates and preparation and distribution of meals for 1300
    Offenders at 28 different locations.

  • I was employed by chain of retail shops named Sollys. Primary duties were meeting quarterly projected outcomes, financial control, recruitment and training for staff including the specialised
    training for Indigenous persons.

  • I was employed by the Moonshadow Restaurant as a Sous Chef and within12 months rapidly promoted to Head Chef. My duties included the introduction of new and innovative menus
    every three months. The employment, training, supervising, mentoring of 14 staff including 3 apprentice chefs. This position focused on a quality product delivered consistently for customer
    satisfaction.

  • On immigrating to Australia I initially started working for Fisher Catering working at various catering establishments including The University of New South Wales and Master Foods for approximately 6 months, these were both bulk catering kitchens. Secondly I was employed by Spotless Catering and worked mainly at staff restaurants and Corporate Banking board rooms.

  • I Joined the Army as a 17 ½ year old and served in numerous locations. I served with the Royal Military Police, Royal Engineers and finished my career with the Army Catering Corp so I could
    finish my trade as a chef. My catering experience encompassed cooking in field force units, Sergeants Messes, Officer Messes and Camps consisting of 1000 plus soldiers.
