  • This was a great opportunity to create a wine list from scratch and watch it eb and flow with the energy of the space and customers
  • It built to 400 wines and was awarded 2 wine goblets in 2022 and 2023
  • Being a 'smaller' suburban restaurant budget was an issue but I found ways with certain suppliers to split cases and keep stock on hand at a minimum.

  • After an unsavoury experience due to covid-19 I took on a new challenge - a 6 month contract to save Masuya from collapse as a result of COVID-19
  • The restaurant was owing $90k to suppliers and all the staff had returned back home
  • I developed and implemented a sequence of service aimed at luring the CBD business crowd. We were been booked out for lunches for 5 months straight doing 200% capacity every day.
  • I trained a completely new staff from scratch and created a wine list from scratch with minimal cost to the company, drawing new customers and driving business
  • I reduced staff costs, increased sales and wiped off our debt to suppliers.

  • I worked tirelessly to break down barriers between waiter and sommelier and analysed the mechanics of a multi-million dollar wine list.

  • Created a Sommelier/Float position to help section waiters
  • Met up-and-coming cult wine producers of Australia and developed great relationships with them. Ie Nick Spencer, Remi Guise, Eleana Anderson, David Bowley, Tessa Brown.
  • Had to source wines not commercially available through major retail chains, in 25 case allotments.
  • Helped launch the NOMAD online wine website, providing copy and wines.

  • I worked closely with Chef Alex Delly and Jo Thomas to create a wine list to suit the food, region and philosophy of the restaurant.
  • We were awarded a wine glass by Good Food Wine Guide 5 times with 70% of wines under $70
  • Awarded 2 glasses from Gourmet Traveller 3 times 'a wine list worthy of a detour'.
  • Upon returning to Sydney I stayed on as wine consultant which taught me to design wine lists that could impress reviewers as well as sell themselves - understanding the staffing limitations of a small business.
