- Co-management of University of Adelaide Winery: 30T University of Adelaide winemaking and 70T contract premium winemaking, from, staff management, vineyard maturity sampling, ripeness/disease assessments, harvest timing, grape receival, fermentation management to blending, stabilisation, fining, filtering, bottling and final packaging, lab analysis
- Developed inaugural Foundations of Wine Science course, including in country sensory session, for Haide College, Qingdao
- Improved wine quality, and sustainable practices, by implementing improved fermentation techniques and processes
