Progressing from a bars focused background through to an operations and head of beverage role at one of London's most desirable all-day dining groups has afforded the opportunity to lead and grow multi-level and multi-outlet teams, whilst simultaneously overseeing the strategic operation of bars and forging long-standing supports and activation relationships with key brand partners. Project focused and venue opening consultation with a multi-site UK based hotel group has also been a recent experience.

  • This role within this highly regarded and celebrated hospitality operator has been of incredibly valuable experience since joining in 2022
  • As a senior manager within one of Australia's most highly celebrated destination bars, the role of Venue Manager is responsible for a myriad of responsibilities to ensure ongoing successful operation on a day to day basis
  • Covering all areas from stock procurement and budget controls, staff hiring, retention and development to overseeing maintenance and compliance within the venue
  • Keys skills honed in previous positions have helped to ensure smooth and successful operation of this venue and ensure that it fits into the overall global strategy of the business.

  • A long-standing role, this position covered all aspects beverage operations within a growing independent all-day dining and coffee group
  • As Head of Drinks, it was my role to oversee and ensure smooth operation of bars departments across 7 London based restaurants by working closely with site management teams as well as front of house and head office teams
  • Developing a continually successful beverage program through strategic planning and product and menu development, as well as an active leading role in all training and progression of all teams were key to delivering strong & successful year on year growth whilst overseeing new openings
  • Shifting roles within this company to a site focused position allowed the opportunity to work closely with our General Managers and Head Chefs on a multi-site basis, aiding smooth and successful operation
  • As a mentor for junior managers and a support for senior individuals, my role was centred around service focused project development, refining training standards and consistency of product and service whilst operating within sales and labour budgets.

  • As an independently employed consultant for a growing hotel group in the 'Luxury-Lifestyle' sector, I was employed in the pre-opening phase to develop the full beverage program and effective operations for a flagship location
  • This role required the development of all operations & SOP materials from the ground up, whilst also key role hiring, team training and development around concept and product creation
  • Furthermore, sourcing and development of relationships with key suppliers and brand portfolios, leading to negotiation of support contracts, activations and financial incentives were a key part of this project.
