II completed my chef apprenticeship under the renowned TV chef Iain Hewitson at Tolarno's Bar + Bistro. Subsequently, I worked at various cafes and restaurants throughout Melbourne, assuming diverse roles. In early 2005, I began my tenure at St. John's Regional College as the school canteen manager, catering to approximately 1400 students and staff. Over the years, my job role has evolved significantly. For the past five years, I have managed and facilitated the Year 9 Cafe program, which is a project-based learning curriculum. In this role, I operate the school cafe with a group of Year 9 students on a weekly basis, training them in all aspects of hospitality and culinary operations. This includes customer service, cash handling, basic food preparation, health and safety, food safety, nutrition, among other skills. Additionally, for the last 2.5 years, I have taken on the role of VET Commercial Cookery trainer at our onsite restaurant, Graduates. This role has been immensely rewarding as I have witnessed Year 11 and 12 students grow both professionally and personally throughout their final two years of high school. I am passionate about inspiring the next generation of hospitality and commercial cookery students.
