  • My role was to prepare the pigs and lambs before cooking them, and then, once cooked, to cut them up and arrange them in such a way as to meet the expectations of each customer.
  • I have also helped to prepare gratins à la carte.
  • After preparing the portions of meat and gratins for the customers, I reheated the dishes before the service so that once the customers had arrived it was quick for the waiter to take the dish to the table.
  • When all the dishes were served, I headed for the dishwasher until the end of the service.
