  • I was asked to come run the bar and restaurant at great Keppel island. I had been an employee of this resort 10 years ago and always kept in touch with the resort manger and owners. They gave me the opportunity to come to Australia to be the food and beverage manager for the hideaway. This role included working very closely with the head chef to develop menus and costs. I had to develop new bar menus and run specialty nights such as Mexican and Japanese nights. We also have a lot of weddings on the island so I’m also in charge of prep for the weddings and to make sure the day runs well. Every year at Christmas we run a 500 person Christmas lunch and it was my responsibility to set up and run this. I was in charge of training my supervisors and general staff members at the resort. I am in charge of ordering stock and keeping to strict stock levels and profits.

  • I spent one year as assistant manager and then was promoted to general manger of a 42-bedroom hotel/pub in a very busy part of the lake district.
  • This role includes the daily running of the hotel plus management of 35+ staff members hiring and training of these staff members, keeping to a set wage budget and maximizing profits.
  • Also making sure we have a growth year on year, hitting set targets and keeping a very high standard.
  • Part of the inn collection group.

  • Upon returning to the England I went back to work in my old pub returning as assistant manager.
  • It is my job to oversee a team of 12 staff members in their daily work duties.

  • This consists of getting real ale ready to be served and I have 10 ales on at all times plus a number of lagers.

  • It was also my responsibility to help train up new staff members this include teaching how to pour beer and ale correctly, good customer service and health and safety practices including COSHH and safety in the workplace.
