- Will start at 10pm or 3am depending on what time the fish comes in and would be finshing around 11 or be doing overtime... i would start the day putting fish into a tank of water cleaning and pushing them through escalito to the team on the otherside for them to organise the fish separating them from male to female. I would be finished and be cleaning the area i worked and would choose to finish up or help cut and package the fish.
