  • The site slaughters 16,000 pigs per week and these pigs’ standards are the highest welfare standards in the world regarding freedom foods standards
  • If any businesses require Waitrose pork, then Dalehead Spalding is the factory who supplies the Pork
  • In addition, we also supply M&S, Tesco & some 106 raw material suppliers
  • We export to Japan, China
  • The factory had 10 million invested into the factory and as such, many government & other enforcement agencies visited the factory due to the high-end standards we adopted.

  • When I joined ABP Ellesmere, it was clear that the raw material standards were not consistent with the butchery standard specification
  • As such I implement a data base system and intake team
  • So, if the primals or VL were not to specifications, then the intake butchery team would trim the primals to specification and input the information to produce a yield
  • Then a financial charge would be charged back to the suppling company using me data base intake system.

  • At that time, the supermarkets were moving away from in house butchery departments to a centrally packed concept
  • Because of this, I was tasked to audit some 460 stores to establish the feasible aspect of individual department and facilities to move to centrally packed meat.
