  • Example of a recent Long Term Project. Chicken Lads Hampton September 2022 to March 2023. Full delivery of a permanent retail roast chicken outlet from inception to operation. Scope including concept design, brand creation, site build management, menu creation and development, research and source equipment leading to a first of outcome for a unique piece of equipment, compliance to various statutory bodies, source and implementation of various software platforms including POS, stock control, systems management and HR, team recruitment and training. Full financial responsibility for the project.

  • PoloX is the owner of Portsea Polo and Flinders Polo.
  • Reporting to the PoloX Board I engaged various sub-contractors to deliver our annual events, Portsea Polo and Flinders Polo.
  • My role was autonomously overseeing the successful and profitable operation of both events. We engaged an event management business to operate the events on our behalf. Key to the role was holding this contractor accountable.
  • The role expanded over time as we transitioned away from a key event management provider. This evolution expanded my role.
  • My ultimate role included event concept design, full P&L accountability, sponsorship sales, sponsor contract negotiations, manage sponsor deliverables. Engage, brief and manage event operations manager to deliver the events. Source various permits, permissions and licenses.

  • The Pantry is an iconic Brighton institution of over 30 years. The Pantry is a multi outlet hospitality operation.
  • I was responsible for a team of 160 staff. My role was all encompassing and included responsibility for operations, recruitment, menu development, full suite of HR requirements, marketing, stock management, sales activities, supplier negotiation and management, financial accountability and special projects.

  • Growing Brands. Worked with Founding Pantry Owner to develop a series of brands including Royale Brothers (burger brand), Pantry Delicatessen (Retail Delicatessen and Take-Home Food Brand), Hiro Sushi (Japanese Take Away Brand), Green (Vegetarian/Vegan Restaurant Brand)
  • Pantry Master Class and Cooking Show. Cofounder of unique live “cabaret” style cooking master class featuring high profile Australian and International Chefs including- Marco Pierre White, George Calombaris, Manu Feildel, Pete Evans, Frank Camorra, Guy Grossi, Christine Manfield to name a few.
  • Full development and delivery of concept
  • Sponsorship- source, secure and successful negotiated contracts with international sponsors including Miele, Renault, Breville, CUB

  • Owner Chris Lucas secured Good Food Guide Restaurant of The Year in 2003.
  • I supported General Manager Erez Gordon and Executive Chef Paul Wilson in operations and HR responsibilities through this busy period as I transitioned back to Melbourne after my Sydney restaurant sale was completed.

    Morgans Restaurant through the 90s was a popular upmarket hangout for the film and fashion industry.

  • Regular local customers included Hugo Weaving, Baz Luhrmann and Justin Hemmes. Ewan McGregor would while away the hours with us in between Star Wars filming commitments. Red Hot Chilli Peppers Flea stopped by whenever he was in town.

  • Morgans was a small but very busy and popular institution.

  • My role commenced as floor manager, then developed to General Manager, after seven years I became a fifty percent partner and owner. I took full responsibility for all aspects of the running and operation of this business.

  • In 2002 my partner and I sold the business and I returned to my native Melbourne.

    The Grand Hyatt is a Melbourne icon. Located prestigiously on Collins Street, it is surrounded by the city's high fashion and fine dining.

  • I was selected to compete a 12 month in-house F&B Trainee program facilitated by Hyatt Hotels. This outstanding program allowed me to work through all of Grand Hyatt Melbourne's various F&B operations and formally learn, in minute detail, the important classic skills that created the foundation build my career upon.
