During my time at Mercers Restaurant, I have gained a appreciation and love for the industry; I have been able to compete on a state level as well as a national level in cooking competitions with the ambition to be able to compete at more competitions in the future.
In my free time I enjoy being able to take myself outdoors, hiking, kayaking and rock climbing as well as being able to explore Melbourne's dining scene
I also run a small second hand clothing business at a range of Melbourne's market places.
Under the guidance of Stephen Mercer I am 20 months into my commercial cookery apprenticeship where i have gained experience in pastry, larder ,running the pass and most recently being incharge of pastry and larder.
During my time at Montibello's I prepped during the, ran the fryer and salad sections of the restaurant. I did this to gain experience in the industry before starting my apprenticeship
