Summary

I am a final-year PhD student at RMIT University specialising in food chemistry, and my thesis entitled “In-depth understanding of interactions between alpha-amylase and phenolics from pitaya fruit utilising molecular biochemistry, enzymatic assays, spectroscopy and in-silico simulations” was summitted in November 2024. My research interest is upcycling bioactive compounds into medicinal applications to improve health outcomes through sustainable innovation. I have worked on projects such as 3D printing of chocolate and recycling food by-products to minimise waste and enhance nutritional quality. My collaborative experience with chemists, engineers and clinicians, paired with my background in mentoring and teaching postgraduate and undergraduate students, enables me to work in diverse teams. As a course tutor, I have been teaching and communicating in multiple languages, with experiences of presenting at multiple international conferences and successfully building up collaborations.

Research Assistant – 3D printing of chocolate

  • Contributed to writing the grant application to secure funding for the project
  • Assist in designing experiments related to the 3D printing of chocolate for dysphagia patients, including rheological, textural and tribological analyses for product innovation in specialised markets
  • Analyse the microstructure and sensory attributes of printed chocolate samples, utilising EyeQuestion software for consumer preference evaluations

Research Assistant – Recycling acid whey

  • The project focused on recycling acid whey, a by-product of cheese production, using membrane filtration
  • Utilised MALDI-TOF Mass Spectrometry and SDS-PAGE to analyse the molecular composition and protein profiling of recovered proteins, ensuring their integrity and functionality for food applications
  • Conducted Zetasizer, differential scanning calorimetry (DSC), circular dichroism (CD) and other spectroscopic analyses for detailed analysis of protein particle size distribution and stability
  • Used fluorescent probes for detailed protein structure and interaction analysis, providing insights into the functionality of recovered proteins in food applications
