- While at Catalano's I worked with coffee for the first time, and taught myself how to do basic latte art and swap between bar and cafe without a second though
- Explained daily specials and beverage promotions to servers and communicated how to upsell by teaching servers about spirits and cocktails
- Managed bar inventory, wastage, par levels, restocked supplies and placed orders for spirits, beer, wines, and mixers/ garnishes.
- Made new cocktails every week to keep up our promotion for weekly fresh menus.
- I took responsibility of intoxicated patrons, with no security using disarming and calming language i never had a problem asking people to leave without an argument.

- This is a volume venue late night venue finishing work at about 3am, so having reliable transport was a must.

- At Mechanics Institute I put a lot of time into my knowledge of spirits and classic cocktails
- I studied and researched everything i could to know about bourbon, whisk(e)y, gin, tequila, vodka and aperitif's/ digestives. Including history and origin, folklore, taste and flavour notes, rules and requirements, science and the method of production.
- I made cocktails at volume here and had a lot of competition entries for small local cocktail competitions and bigger competitions.
- I learned alot from my mentor charles about the operation of the bar as well as how to make cocktails, pre batches, foams, caviar spheres and a lot of other cocktail gastronomy.
